Ingredients:
* 1 Tbsp olive oil
* 1 bay leaf
* 1 tsp dried thyme
* 1.5 tsp ground cumin
* 2 cloves garlic, minced
* 1 onion, chopped (didn't feel like onion, so I skipped it)
* 1 bell pepper, chopped (used green & red bell peppers, one each)
* 2 cups water
* 1 cup dry brown rice
* 1.5 cups cooked black beans (or one can)
* 1 Tbsp cider vinegar
* salt & pepper to taste
Instructions:
* Sautee the first group of ingredients until the onion and pepper(s) are tender. (This takes about 5min.)
* Stir in second group of ingredients and bring to a boil. Cover, reduce heat, and simmer until rice is cooked. (About 20min.)
* Let sit 5min before serving.
