Chocolate beet cake with cream cheese frosting
It's been nice having the kitchen to myself for an afternoon.
Cake Ingredients:
* 3 large beets, boiled until soft, skin removed
* 1/2 c. applesauce
* 1/2 c. oil
* 1/2 c. milk
* 1 1/2 c. sugar
* 3 eggs
* 1 tsp. vanilla extract
* 1 tsp. kaluah
* 2 c. flour
* 1 1/2 tsp. baking soda
* 1/4 tsp. kosher salt
* 1/2 c. cocoa powder
Cake instructions:
* Puree beets and applesauce in blender or food processor until smooth.
* In a large bowl, combine wet ingredients and stir thoroughly.
* In a separate bowl, mix dry ingredients. Add dry ingredients to wet ingredients, stirring until just blended.
* Pour batter into oiled 9x13 cake pan and bake at 350F for 35-40min, or until cake passes the toothpick test.

* 1 8oz package cream cheese or Neufchâtel cheese
* 1 tsp. vanilla extract
* Confectioners' sugar
Frosting instructions:
* Mix cream cheese with vanilla extract. Stir in confectioners' sugar to taste.
