It took less energy to cook than go out to eat
Bachelorette rice pudding:
Ingredients:
* 1 12oz can of condensed milk
* 1/3 cup uncooked rice (short grain is better, but just about any will work)
* 1 egg, beaten
* 1/4 cup brown sugar
* 1tsp vanilla extract
Instructions:
* Reconstitute condensed milk and mix in a pot with the rice. Bring to a rolling boil, reduce heat, and simmer until rice is tender (20-30min), stirring frequently to prevent rice sticking to the bottom of the pot.
* Mix brown sugar and vanilla with beaten egg, then spoon in hot milk mixture until you have a total volume of around 1/2 cup. (This warms the egg so that it doesn't cook on contact and give you milky egg-drop soup.)
* Stir egg mix into milky rice, and remove from heat. Let stand covered for 10min, stirring occasionally. Pudding will thicken as it cools.
