Peach bread pudding
Ingredients:
* 1.5-2 loaves stale challah
* 1qt peaches in simple syrup (I used some that I preserved back in August. YMMV.)
* 6 large eggs
* ~1c. milk
* 1c. heavy cream (other recipes recommend butter, but melting w/o overheating is a pain)
* 1tsp vanilla extract
* Cinnamon
Instructions:
* Cut or tear bread into chunks that are no larger than 1/2" on at least one dimension. If it's not already stale, leave pieces out (covered with a cloth or paper towel) overnight.
* Drain peaches and reserve syrup.
* In a large bowl, lightly beat eggs. Measure reserved syrup & add milk to reach 1.5c., stir into eggs & add other liquid ingredients.
* In a 9x13" baking dish, mix peaches & stale bread. Pour liquid overtop; bread should be mostly or entirely submerged. Let soak 30min. Sprinkle cinnamon on top.
* Bake at 350F for 30-45min.
Optional: Rum sauce
* 1c. water
* 1c. sugar (white or packed brown both work)
* 2T butter
* 1/4 - 1/2c. rum, to taste
* Dissolve sugar in water, simmer for 8-10min.
* Mix in butter & rum, stir until butter has melted and sauce has a uniform consistency.
